(makes 2 dozen)
250ml cake flour (1 cup)
10ml baking powder (2t)
12,5ml cornflour (1T)
85ml milk (1/3 cup)
50ml sugar (4T)
12,5ml oil (1T)
125ml mashed banana (1/2 cup)
1> Sift the flour, baking powder, cornflour and salt into a bowl.
2> Whisk egg, milk sugar and oil together and add to the dry ingredients with mashed banana. Mix with a wodden spoon until smooth.
3> Drop teaspoonful of the batter into hot oil and fry until golden in colour.
4> Remove fritters from oil with a slotted spoon and drain on paper towel. Roll in cinnamon sugar made from 125ml castor sugar (1/2 cup) and 5ml cinnamon (1t).
5> Serve warm.
TIP: Fill a pan with oin, approx, 5cm deep and heat. Test temperature of oil by dropping a little of the batter into the oil. It should surface immediately and have bubbles around the edge. Turn the fritter over when light golden in colour and cook the other side. Do not fry too many fritters at once as this will lower the temperature of the oil.
