CHOCOLATE CHERRY SHORTBREAD

½ cup butter                                                                   ¼ cup castor sugar

1 ½ cups cake flour                                                          1/3 chocolate chips

6 glace cherries, quartered                                               icing sugar

 

Preheat oven to 160C. Cream butter and sugar until light and fluffy. Gradually add sifted flour, chocolate chips and cherries and mix well. Press into a 27 x 18cm baking tray. Bake for 25 minutes until pale in colour. Cut into squares while still warm and allow cooling. Sprinkle with icing sugar. Store in an airtight container.
