CHOCOLATE MOUSE

200g dark cooking chocolate
4 tbs. coffee granules
5 eggs (separated)
1 tsp. vanilla essence
1 cup fresh cream

Method:
Melt chocolate on top of double boiler. Stir in coffee and then remove. Beat in egg yolks and vanilla essence. Whisk egg whites and fold in. Whip cream until peaks form. Gently fold in cream
