CUPPOCHINO MUFFINS

500ml flour
125ml brown sugar
15ml baking powder
100g chocolate chips
25ml strong instant coffee granules
80ml hot water
100ml oil
100ml buttermilk
2 eggs

Method:
Preheat oven to 180
In a bowl, combine the four, sugar and baking powder
Add the chocolate chips.
Dissolve the coffee in the hot water and cool slightly
Combine the oil, buttermilk and eggs and cooled coffee mixture. Mix well. Add to the dry ingredients and mix until just combined. Don’t overmix
Spoon into greased muffin tray and bake for 20 mins
