Fish Mauritian Style


400g hake
30ml fresh lemon juice
15ml margarine
2 onions,chopped
2ml crushed garlic and ginger
3 ripe tomatoes - pureed
30ml tomato paste
3-5ml cayenne pepper
1-2 green chillies - seeded and minced
30ml dhania leaves - finely chopped
10ml margarine
1 green pepper - seeded and cut into strips.

1> Cut the hake into large cubes. Sprinkle with lemon juice and salt to taste. Leave to marinate.

2> Place margarine, onion, garlic and ginger in a glass bowl and cook for 2 mins on 100% power. Add tomatoes,tomatoe paste, cayenee pepper, green chillies and dhania. Cook for a further 1-2 mins on 100% power.

3> Pre-heat the browning skillet for 4 mins, place margarine and fist into skillet and saute until fish is almost cooked - 2-3 mins on 100% power. Turn fish during cooking.

4> Pour sauce over fish cubes - place green pepper strips on the top cover with the lid and cookon 100% power for further 2 mins.
